Avocado-yoghurt with fruit and roasted coconut flakes

Some mornings I really don’t have a clue for what to eat… And that’s how I came up with this avocado-yoghurt. It’s creamy with a bit of sourness just like yoghurt and of course filling. Add the toppings you like, maybe a granola or a mix of fruits or berries? 

No preparations are needed. Well, I guess if you really want to, you could soak the cashews in some water the night before. But as I said, this came up when I hadn’t made a plan so it works perfectly without as well.
I make the yoghurt in my high-speed blender but if you don’t have one yet, you might have to run the ingredients in a food processor and then finish it off with a hand blender to get it really creamy.

Ingredients
A handful of raw, unsalted cashew nuts
1/2 avocado. peeled and cored
The juice of 1 lime
A supertiny pinch of salt
1/2 teaspoon of grounded vanilla
2 teaspoons of coconut oil (deodorized)
2-3 tablespoons of cold water, depending how loose you prefer your yoghurt

Topping such as granola, dry roasted coconut flakes, fruit, berries, superfood…

How do I do it:
1. Add first 2 tablespoons of water to your mixer ( by doing this first you make it easier for the knifes to run).
2. Add the other ingredients and mix until you have a creamy yoghurt.
3. Pour into a bowl and add toppings of your choice.
Enjoy!

This recipe is free from lactose, gluten and sugar.
It’s suitable for vegans, paleo, raw food and LCHF.
