Fresh dessert with coconut milk, red berries and rose water

The inspiration for this dessert I had years ago in an Indonesian restaurant. I have never had it since but the tastebuds hadn’t forgotten about it. It was time to create a copy-cat from an old food memory, fresh dessert with coconut milk, red berries and rose water!

A screaming hot day, a reserved table and a date with good friends. We enjoyed the big, traditional rice table and were actually satisfied but my sweet tooth was still screaming. Give me something! This coconut dessert was filled with crushed ice, fresh berries and just fantastic.An absolute winner that warm day. And still is.
The accent from the rose-water gives the final punch to it. Start with the smaller amount to see how concentrated taste you prefer. Read more about rose water here.

Fresh dessert with coconut milk, red berries and rose water

2 persons

Ingredients
250 ml thick coconut milk plus maybe some water to get the right texture
50 gram frozen raspberries
1 teaspoon vanilla powder
1-2 teaspoons of rose water (depends on how concentrated you like the taste to be)
75 gram fresh, mixed berries cut in smaller pieces (like strawberries, raspberries, red currants and blueberries)
100 gram crushed ice
Fresh mint

How do I do it?
1. Prepare the fresh berries with cutting them into smaller pieces. Set aside for now.
2. Add the coconut milk, frozen raspberries, rose water and vanilla powder to your mixer. Run until completely mixed and with a beautiful light pink color to it. Adjust the texture if needed. You decide yourself how thick you prefer it to be, like a smoothie or a more creamy dessert to eat with a spoon.
3. Pour some of the fresh mixed berries in long drink glasses or ice-cream coups. Add some of the crushed ice and then add some of the mixed coconut milk on top. Repeat until the glasses are full.
4. Add some mint on top and serve immediately.
