Healthy appetite and whooohoo-delish black sesame seed butter

Gizzi Erskine is a British chef and TV personality that I until now some how have missed out on. Such a pity because this fourth book of her, Healthy appetite is so inspiring with mouth-watering recipes with tastes from al over the world.Even though healthy, the author is not taking any side for this or that diet. A uplifting thought. It’s just recipes focusing on good food with lots of taste to enjoy on a daily basis. Just like the wonderful roasted sesame seed butter that I have picked out for you.

According to Erskine, many of the recipes have been developed “by accident”, with a leftover as a start and a new idea popping up. Ideal for any conscious foodie in other words.
Some of the recipes includes both meat, chicken or fish but I’m convinced that it is possible to make the dishes vegetarian or even vegan very easy. There are so many tastes that are combined in one dish that you easily could add or withdraw another ingredient. The sky is the limit.

I have selected one of the recipes from the book. It really wasn’t that easy to pick just one, there are so many! Toasted black sesame seed butter, super simple and whooohoo-delish!
I know it looks strange with that black mud puddle on the plate but please don’t let it scare you off. Just give it a try, you won’t regret it.

Add the salty and sweet butter to a slice of apple, a piece of bread, to your yoghurt, smoothie or why not to your salad dressing for a new taste sensation? Just make sure to check your teeth afterwards since the crushed seeds have a special skill of getting in between everywhere!
The butter stays good for a few weeks if kept in a sterilized glass jar in the refrigerator. That is of course if you can keep your hands of it for that long!

Lets get to work!

Ingredients
100 gram black sesame seeds
4-5 sesame oil (not roasted) or other neutral oil like sunflower
1 tbs maple syrup (I took 1/2 tbs of agave instead)
A good pinch of sea salt (I always prefer Maldon)

How do I do it?
1. Add the sesame seeds to a dry skillet and toast the seeds for about 5 minutes on a low heat.  Stay with it and stir continuously with a wooden spatula.
Trust your nose and the wonderful smell that is coming to judge when its ready since it is difficult to see when the black seeds are ready. You need the seeds to get a good roast to avoid any bitter taste but be careful, you don’t want it to get burned!
2. Add the roasted seeds to a strong blender and mix until the seeds are devices in smaller pieces.
3. Add the oil, the syrup (or agave) and the salt until completely mixed and smooth.
4. Add the ready made butter to a glassware and enjoy!

This recipe is free from gluten and lactose. It contains a small amount of sugar due to the maple syrup (or agave).
The butter is suitable for vegan and paleo diets.
