Refreshing smoothie with watermelon

When summer is coming, I always want to eat red, juicy and sweet watermelon. Not just a small piece but lots, like really a lot! One warm morning the other day I made this refreshing smoothie with watermelon and fresh mint.

Probably you knew that watermelon contains more than 90 % water but did you also know that its full of antioxidants and other important nutrients including thiamine, riboflavin, vitamin B6, folic acid, magnesium, potassium, zinc, copper, manganese and selenium among others… I didn’t. Anyway, without getting too much into the details. Watermelon is really good for us to eat. Hurray!

I tend to eat my watermelon just like it is, maybe cut in smaller pieces if I want to be a bit well behaving. A salad combining the melon, feta cheese, fresh mint and maybe some salty olives is also a perfect alternative to something from the bbq. Or cut it in slices and place it shortly on the bbq self. Mmmmm.

Sometimes I get fed up with my too big piece and I slice it in smaller pieces and put it in the freezer. Then I can make a healthy melon slush or ice-cream whenever. For the ice cream; just add frozen banana, some plant-based milk or nut butter and frozen melon to the mixer. Let it swing a few rounds and there you are, ready for an ice-cold party!

And sometimes I freestyle and at those moments I come up with things like this smoothie. Refreshing and filling. Perfect in the morning or at any time of the day.

Refreshing watermelon smoothie

2 persons

Ingredients
250 gram watermelon flesh
150 gram coconut yoghurt or other alternative as preferred (plant-based or just regular)
The zest of 1 lime plus the juice OR the zest of 1 lemon and the juice of 1/2 a lemon
0,5 teaspoon grounded vanilla powder or 2 drips of vanilla essence (I use this one from Spice drips)
A handful of fresh mint leaves
1-2 teaspoons of coconut oil (optional but adds creaminess and make the smoothie a bit more filling suitable for a breakfast etc)

How do I do it?
1. Separate the watermelon from its thick, green shell, if needed for your mixer cut it in smaller pieces. Clean the lime/lemon and mint.
2. Add all ingredients to a mixer and let it run until you have creamy smoothie.
3. Serve in two glasses and enjoy!

This recipe is free from (white) sugar, gluten and lactose (if using  plant-based yoghurt).
It’s a vegan, paleo and LCHF friendly recipe.
