The inspiration for this dessert I had years ago in an Indonesian restaurant. I have never had it since but the tastebuds hadn’t forgotten about it. It was time to create a copy-cat from an old food memory, fresh dessert with coconut milk, red berries and rose water!

When I’m trying to get back on the path... Raw f When I’m trying to get back on the path... Raw food for breakfast! A number of years ago, I did “an experiment” and lived on 95% raw food for two years. It tasted great and I loved it until I suddenly felt I longed for warm food again. I learned so much from it though! 
So today an old favorite breakfast with mixed apple, kiwi and celery topped with seeds and raw cacao nibs. Happy me❤️

I realized that I had bought 15 red peppers for so I realized that I had bought 15 red peppers for some good reason that I couldn’t remember anymore 😂 Time to do something with them! Now I have pickled red peppers in dille and fennel in my refrigerator for happy days to come! 💚💚💚 I have a feeling they will work perfectly with my almond cream cheese later....

Hello first Monday in a new year! Today we get up Hello first Monday in a new year! Today we get up slightly earlier then the past weeks... The office is cleaned up, bookkeeping almost done and fresh plans ahead. 
A toasted sourdough sandwich with old fashioned Tartex herb pâté (haven’t had that since 30 years... but oh it’s so good!) and pickled cucumbers will do just perfectly with my espresso. 
And a very thankful thought; my hip surgery is the BEST thing I’ve done! Even though I’m still in recovery it’s a lifetime difference. I didn’t know anymore that you that you could live without pain... Now I know🙏🙏🙏

So bookkeeping is not one of my best hobbies... bu So bookkeeping is not one of my best hobbies... but food chemistry is one of my favorites! The past days I’ve been busy with cured food. Very interesting for a food nerd😉 Of course I have made classic cured salmon earlier with sugar, salt and dille but right now I’m interested in what it can bring for different veggies. To start off I tried with two different products; biodynamic egg yolk and avocado. I wanted to compare two different fat vegetarian products and see what happened. 
After 4 days completely covered in an even mix of sugar and salt in two different containers, I gently washed them and dried them for 3 hours on 70 degrees. You can see in the pictures after the curing and then after the drying. 
The avocado got slightly too salt but very easy to cut and almost a bit meaty in the texture. I think it would be fun to smoke it slightly. 🤗
The egg yolks are dry and easy to cut or even preferably to grind fine. They have an intense
 taste of umami and reminiscences of caviar. Yes, I understand you can wonder why I did egg yolk when always cooking vegan but sometimes you have to be able compare. 
The most interesting difference was how the salt-sugar reacted. The one with the egg yolk got dry and cracked and the one with the avocado got almost like a salt syrup. Sticky and soft. How interesting! How come? Is it because of the oil from the avocado? Or something else?
Yes. I’m a food nerd that loves experimenting... 😂

If so, I have a nice dessert for you! I have already made it twice since Christmas... Of course because I had to try out the recipe that it really worked 😅
Anyway, I started with this when I wanted to do something with my Christmas tree... Meet my dessert with caramelized pineapple with rosemary, crunchy baked Christmas bread with marzipan and homemade vanilla ice cream topped with Christmas tree oil and caramelized orange peel. 
What I really enjoyed with making this dessert (part from sharing it with friends) was that I could make use of great ingredients; needles from the Christmas tree, reusing a dry fruitcake and give it a new tasty life and I even have made use of the peel from the pineapple in another recipe (coming soon) and orange peel! Love to play with food🤗
