Today, I serve a colorful green paté with cranberry sauce on the blog. You can choose to serve it cold as an appetizer or as a main course with maybe some boiled potatoes and a salad to go with it. It will be good anyway.
In the winter, I think you can take bigger and bolder turns with spices in the kitchen. Warm spices are good for a frozen soul! Today I decided to make a homemade tandoori spice blend, a spice mixture that has its origins in the Indian, Pakistani and Afghan cuisine.
In Sweden, as in many countries the Christmas is filled with traditions of dishes that should be served around this time of the year. I however think it’s the different spices that really make Christmas. Today, the classic gingerbread spices will give taste to my Christmas granola with orange. Good for a yogurt, in a cake or maybe even as adding some crisp to a salad!
This Christmas bread contains all the classic Swedish taste of christmas. Cloves, bitter orange, ginger and cumin provides a wonderful aroma and flavor that immediately takes me back to my childhood Christmases. Enjoy it with simple accessories like butter and a creamy, mild cheese so that al the spices can flourish on their own.
In Sweden, it is very common to prepare your own christmas candy. We gather with family and friends and make caramel, marzipan, gingerbread and chocolate for a whole day. We drink mulled wine, do small talks, cooking and trying not to finish all goodies. Finally you roll home with a full stomach and hopefully a bowl of homemade candy to enjoy for Christmas (if you didn’t eat it all during the making of…).
I bought a whole bunch of curly kale the other day and have all sorts of ideas what to do with it. Here is a first recipe that works well for lunch or even as an appetizer? I give you egg-free green pancakes with lots of curly kale!
Almost christmas! The different taste and smell that comes to my mind when I think about christmas would be saffron, cinnamon, Seville (bitter) orange, cloves, ginger and lots of different kind of dried fruits and nuts. In other words, high time to start using some of these spices.
