Today I make bolognese with Beluga lentils and red wine, crazy good for both pasta’s and to enjoy with tortilla and guacamole! The red wine will bring the lentils to the next level so be sure to choose a decent one for this dish!

Most often you probably buy an already made tofu but you can also make it yourself, either from scratch from soybeans or as today a homemade tofu made from soy milk. You can quickly make it and can replace both mozzarella and cottage cheese with it.
The trick to make a great homemade salsa brava is to roast the tomatoes, garlic and almonds first. It makes a worlds difference to the final taste in the dish! And it works with so much more then just the patatas bravas (the Spanish version of “French fries”)…
This time for my category Tasty books, I have chosen a Dutch book; Pomodori by Angelo Dorny. I like a bit nerdy books on only one theme and this one is no exception – only about tomatoes! Did you know that there are about 10-15.000 different kinds of tomatoes in the world? Al with different color, shape, origin and use. In my supermarket I can find only about five different ones. Where did the rest go?
