Luxurious truffle salad with homemade tofu


Today I prepared a really easy and delicious recipe for you; my luxurious truffle salad. I make it with a few drops of truffle oil and some truffle that I found at the market. If you can’t manage to find that, the truffle oil alone will also give you a great taste. You could also consider using a homemade delicious mushroom paté.


The salad is done in just a few steps. You will need both a mayonnaise and tofu, I had some aquafaba mayonnaise ready in my fridge and made my homemade tofu in just a few minutes. If you don’t have any of it, it probably works just as well to use bought mayonnaise and tofu even though the taste and consistent will be slightly different. Homemade always taste better if you ask me…

Luxurious truffle salad with homemade tofu

130 gram homemade tofu (see link)
7 tablespoons / 70 gram aquafaba mayonnaise (see link)
A few drips of truffle oil
Salt and pepper
Some chopped chives (optional)
Some finely chopped fresh truffle or delicious mushroom paté (see link for recipe)optional

How do I do it?
1. Mix the mayonnaise with the truffle oil, chives, truffle tapenade and salt and pepper.
2. Add the tofu to the bowl, carefully mash the tofu in smaller pieces. It shouldn’t turn into a mash!
3. Fold in the mayonnaise in the tofu until you have a creamy salad.
4. Let the salad rest in the refrigerator for an hour to set the taste. Enjoy the salad on sandwiches, pancakes or maybe with baked potatoes. Store the salad in a covered bowl the refrigerator.

 This recipe is free from lactose, milk protein, gluten and sugar.
