Courgette loves lemon

This is a super-simple side dish that works great with meat, fish or just as a vegetarian dinner together with other small dishes. Great when you want to cut the carbs and get a lot of taste to go with your dish.

Why wait, let’s get to work!
A side dish for 2

Ingredients
1 courgette (yellow or green or a bit of both)
Butter or ghee
1 lemon (preferable biological since you are going to use the skin)
Dill OR basil OR parsley (depending on avilabbitly, your own imagination and what it should go with)
A good flakey sea salt and fresh ground pepper
A handful of toasted pumpkin seeds

How do i do it?
Spiralize your courgette. Melt a good portion of butter or ghee in a pan, when melted and bubbling, add the cut courgette. Bake for about 3 minutes.
Add the lemon zest (for best result, use Microplane grater, fab!), salt, pepper and chopped herbs of choice. Pick a beautiful plate, sprinkle some toasted pumpkin seeds and serve with love.
You are done!

To this side dish, a suggestion would be to combine it with my fish cakes and/or sauce of palm heart!
