Mat som gör gott and ovenbaked celeriac with a cheezzzy sauce

It’s time for another Swedish cooking book! This time I have chosen a book written by a Swedish famous chef Tareq Taylor; Mat som gör gott (in translation Food that do good). its al about food that makes you feel good, strong, vibrant and healthy. It was of course a must for me to read this one!Part from running two restaurants in the south of Sweden, Tareq also have made several, very popular tv shows. This recently released cookbook Mat som gör gott is his sixth. In this book the chef is eager to show how we al can enjoy our everyday life just slightly healthier. Not by saying no to everything but by showing how fun and easy it can be to explore a new way of eating. Lots of greens but also meat and fish are included and with the tip of letting vegetables and leguminous plants play the main role rather than other way. Every recipe also has a delicious mix of different herbs and spices from al over the world.  Some of the dishes are quickly made and some takes more preparations. Either way, it’s all about food that gives a silver lining to every day.

Ovenbaked celeriac with a cheezzzy sauce

I have a bad habit of folding pages in cookbooks when I see a recipe I like and that often is the best review as well. The more folded pages, the better cookbook in my opinion. In this book there are so many already so choosing just one recipe was so difficult! But of course I had to… I have chosen (another) recipe with my new-found love – celeriac! This oven baked celeriac with a cheezzzy sauce is fast, full of taste and so easy to make. The original recipe includes both egg and cheese in the sauce, for a vegan version just use the sauce from this recipe instead.
If you happen to get any leftovers from the chezzzy sauce, keep it covered in the refrigerator and spread it on your morning sandwich, add some fresh tomatoes on top and maybe a bit of garden cress and once again you are in food heaven.

Ovenbaked celeriac with a cheezzzy sauce

4 portions

Ovenbaked celeriac
Ingrediens

1 celeriac (about 600 gram)
olive oil
1/2 cucumber
60 gram / 1 dl raw hazelnuts

The cheezzzy sauce
Ingredients
100 gram of strong cheese (preferably Swedish Västerbottenost)
1/2 garlic clove
A pinch of salt
50 gram / 1/2 dl olive oil
50 gram / 1/2 dl water
1 egg yolk

Garnish
Leafy parsley
Garden cress
Chive

How do I do it?
1. Set the oven on 200°.
2. Peel the celeriac with a knife and cut in four thick slices. Cut the cucumber in pieces.
3. Bake the slices of celeriac in a baking pan with olive oil. Move them to a ovenproof dish and bake them in the oven for 20 minutes.
4. Roast the hazelnuts in a dry skillet. Let them cool of slightly and then rub off the skin of the nuts. Do this with your hands or by using a towel. Chop up the nuts roughly.
5. The sauce: grate the cheese. Peel the garlic and slice it. Add the cheese, garlic, salt, olive oil and water to a small pan. Let it melt carefully on a low heat while stirring. Never mind if the sauce will separate, just continue stirring!
6. Take of the pan from the heat when the cheese is melted and continue stirring. Add the egg yolk to the sauce and mix with a hand blender until you have a smooth sauce.
7. Put the pan back on the heat. While stirring, let it thicken up without coming to a boil! Take away the pan from the heat immediately so the that the egg yolk doesnt start to clot. If needed, use the hand blender once more to make the sauce completely smooth.
8. Serve the ovenbaked celeriac and cucumber with the rich sauce sprinkled on top. Garnish with the fresh herbs and roasted hazelnuts. Enjoy immediately.
